Ingredients
- 3 lb. potatoes, peeled and quartered
- 1 c. onions, chopped
- 3 Tbsp. olive oil
- 1 c. cracker or bread crumbs
- 2 tsp. salt
- 1/2 tsp. pepper
- 2 egg yolks, beaten
Directions

1Place quartered potatoes in a large saucepan; add water to cover.

2Heat to boiling.

3Reduce heat and simmer over medium heat for 25 to 30 minutes or until potatoes are tender.

4Drain water, mash potatoes and allow to cool.

5Saute chopped onions in olive oil until clear.

6Add onions, cracker or bread crumbs, salt and pepper to potatoes and remash them.

7Coat a cookie sheet with a nonstick vegetable cooking spray.

8Roll mixture into balls with your hands and place the balls on the cookie sheet.

9Brush them with beaten egg yolks.

10Bake until crusty brown, about 45 minutes in a 400° oven.

11Serve as appetizer side dish, snack or even with brunch.
