Potato Omelette

  • 3 eggs (room temperature)
  • 2 Tbsp. water
  • 4 small potatoes, boiled and diced
  • 1/2 clove garlic
  • 4 green onions, chopped
  • 2 Tbsp. parsley flakes
  • 4 Tbsp. peanut oil
  • salt and pepper
  • 1 Tbsp. butter

Directions

    Saute in peanut oil the potatoes, onions, minced garlic, parsley flakes, salt and pepper to taste; set aside.

    Hand beat eggs and water.

    Heat nonstick frypan with a pat of butter until butter melts and bubbles.

    Pour eggs in and let simmer, adding potato mixture over half of pan.

    When egg is cooked, fold omelette.
