- 3 eggs (room temperature)
- 2 Tbsp. water
- 4 small potatoes, boiled and diced
- 1/2 clove garlic
- 4 green onions, chopped
- 2 Tbsp. parsley flakes
- 4 Tbsp. peanut oil
- salt and pepper
- 1 Tbsp. butter
Directions

1Saute in peanut oil the potatoes, onions, minced garlic, parsley flakes, salt and pepper to taste; set aside.

2Hand beat eggs and water.

3Heat nonstick frypan with a pat of butter until butter melts and bubbles.

4Pour eggs in and let simmer, adding potato mixture over half of pan.

5When egg is cooked, fold omelette.
