- 2 eggs
- 2 Tbsp. milk
- 2 Tbsp. melted butter or oleo
- 2 Tbsp. flour
- 3/4 tsp. salt
- 1/8 tsp. pepper
- 1/4 small onion, sliced
- 2 c. peeled raw potatoes, grated
Directions

1Mix in all ingredients until well mixed.

2For each pancake, pour 1/4 cup mixture on hot well-greased griddle and spread into a 4-inch cake.

3Brown on first side; turn and brown on second side. Makes about 2 cups (8 pancakes).
