Potato Pancakes

- 3 to 4 Russet potatoes (about 1 1/2 lb.)
- 1 medium onion
- 1 egg
- salt and pepper
- 1 Tbsp. milk
- 2 Tbsp. oil
Directions

1Scrub potatoes; steam until almost tender.

2Plunge into cold water, then peel, grate coarsely and grate onion; mix.

3Beat egg with salt, pepper and milk; add to potato-onion mixture.

4Combine lightly.

5Preheat oil on cookie sheet.

6Drop by tablespoon onto sheet and flatten with back of spoon.

7Bake at 350° until bottoms brown, about 20 minutes.

8Turn and brown other side, about 15 minutes more.

9Makes 16 pancakes.
