Potato Pancakes

- 4 large potatoes
- 2 eggs, beaten
- 1/2 c. finely diced onion
- 1/2 c. flour
- 1 tsp. salt
- 1/8 tsp. pepper
- oil
Directions

1Peel and shred potatoes, place in a bowl of cold water.

2Line a colander with paper towels.

3Drain potatoes in colander, and squeeze out as much moisture as possible.

4Place potatoes in mixing bowl, add eggs, onion, flour, salt and pepper.

5Mix well.

6Heat about 1/3 cup oil in a skillet until hot.

7Drop potato mixture 1/4 cup at a time into hot oil, about 3 inches apart.

8Flatten with pancake turner to make a 4-inch pancake.

9Cook pancakes until golden brown, turn and cook other side, about 4 minutes total. Remove to a cookie sheet lined with paper towels to drain.

10Repeat until all pancakes are cooked.

11Serve immediately or place in a warm oven until ready to serve.

12Serve with sugar, maple syrup or applesauce.

13Makes about 16 pancakes.
