  • 4 large potatoes
  • 14 cup onion, grated
  • 2 eggs, slightly beaten
  • 2 tablespoons flour
  • 34 teaspoon salt
  • pepper
  • cooking oil

Directions

    Grate potatoes with a medium grater, drain well and pat dry.

    Measure 3 cups.

    Combine potatoes with onions, eggs, flour, salt and pepper.

    Heat oil in a skillet until very hot.

    For each pancake, drop potato mixture 2 tablespoons at a time into the hot oil.

    Fry 2 to 3 minutes of each side.
