- 4 large potatoes
- 14 cup onion, grated
- 2 eggs, slightly beaten
- 2 tablespoons flour
- 34 teaspoon salt
- pepper
- cooking oil
Directions

1Grate potatoes with a medium grater, drain well and pat dry.

2Measure 3 cups.

3Combine potatoes with onions, eggs, flour, salt and pepper.

4Heat oil in a skillet until very hot.

5For each pancake, drop potato mixture 2 tablespoons at a time into the hot oil.

6Fry 2 to 3 minutes of each side.
