  • 4 pieces big white potatoes
  • 1 cup shredded Italian cheeses
  • 1 piece egg
  • 1 tablespoon cornstarch
  • 1/2 teaspoon Salt & pepper
  • 1/2 cup frying oil (can be peanut oil or canola)
  • 3 tablespoons tomato paste
  • 3 cups hot water
  • 1 teaspoon salt or could replace with a chicken cube bouillon
  • 1 teaspoon sugar
  • 1/2 teaspoon ground black pepper
  • 1/2 cup Fresh cut green onions or scallions to garnish

Directions

    Peel your potatoes and wash. In a deep pan place the peeled washed potatoes, add cold water and cover with the lid. Place in the stove at medium flame and cook until tender; when ready remove the water and mash potatoes until getting a smooth consistency and place inside the fridge.

    When the potato pure is cold add the cheese, cornstarch, seasonings and the egg and combine well using your hands.

    Form small balls and then turn them into pillows, samll cakes or tortitas

    In a skillet add canola oil and fry each pillow until getting a golden color on both sides. Place the fried cakes on a plate with a paper napkin to remove excess oil.

    In a sauce pan add the tomato paste and dissolve with the water using a whisk, add the condiments and let it season at low flame.
