- 1 medium sized potato
- chunky style peanut butter
- 2 1/2 to 3 1/2 c. powdered sugar
Directions

1Boil potato until done (no salt).

2Let cool enough to handle, then peel.

3While still hot, mash thoroughly.

4Begin adding powdered sugar in small amounts at a time until the potato and powdered sugar mixture is at a rolled dough stage.

5Roll out to 1/4-inch thickness.

6Spread with peanut butter and roll up like a jelly roll.

7Chill for 5 to 6 hours.

8Slice into 1/4 to 1/2-inch pieces.

9Serve cold.
