  • 5 potatoes (unpeeled), thinly sliced
  • 2 Tbsp. olive oil
  • 2 cloves garlic
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. freshly grated Parmesan cheese
  • 1 onion, thinly sliced
  • 1/2 sweet red pepper, slivered
  • 1 Tbsp. fresh parsley, minced
  • 1/4 tsp. dried rosemary
  • 1/2 c. shredded Provolone or Mozzarella cheese

    In a bowl, toss together potatoes, onion and oil.

    Stir in red pepper, garlic, parsley, salt, rosemary and pepper.

    Brush a 12-inch pizza pan with oil.

    Spread pan with potato mix.

    Bake at 450° for 15 minutes, or until tender, brown and crisp.

    Sprinkle with cheese; bake 5 to 8 minutes longer or until golden brown. Makes 6 servings.
