  • 2 pounds (about 6 cups) sweet potatoes, peeled, cut into 1-inch pieces
  • 1 tablespoon Land O Lakes Butter
  • 1/3 cup chopped pecans
  • 2 cups miniature marshmallows
  • 1 tablespoon freshly grated lemon zest
  • 1/4 teaspoon salt
  • 1/4 teaspoon cracked black pepper

    Place potatoes into 4-quart saucepan; cover with water.

    Bring to a boil over high heat.

    Reduce heat to medium-low; cook 10-15 minutes or until potatoes are tender; drain.

    Melt butter in same saucepan over medium heat.
