  • 4 medium sized potatoes, peeled
  • 1 c. grated Parmesan cheese
  • 2 eggs
  • 4 Tbsp. butter
  • 8 oz. milk
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Directions

    Cook potatoes and mash while still warm.

    Add remaining ingredients and mix well. Put mixture into well-greased, heat resistant 1 1/2-quart baking dish. Bake at 400° for about 30 to 40 minutes or until golden brown. Serve and enjoy!
