  • 2 c. cold mashed potatoes
  • 1 egg, beaten
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 c. grated American cheese
  • fine dry bread crumbs
  • shortening (to fry with)

Directions

    Combine potatoes, egg, salt, pepper and cheese.

    Shape into balls and roll in bread crumbs.

    Preheat shortening to 400°. Place potato puffs
  4. 4
    in a single layer in the fry basket.

    Cover and fry for 3 minutes or until brown.

    Lift basket and drain. Serve hot.
