- 1 small potato, pared and cubed
- 1 c. water
- 4 to 4 1/2 c. flour
- 1 pkg. yeast
- 1 1/4 c. milk
- 1/4 c. sugar
- 1/4 c. shortening
- 1 1/2 tsp. salt
- 1 egg
Directions

1Cook potato in water until tender; drain, mash and measure out 1/2 cup.

2In large bowl, combine 2 cups flour and yeast.

3In saucepan, heat milk, sugar, shortening and salt until warm (115° to 120°).

4Stir constantly until shortening melts; add to preceding along with beaten egg and potato.

5Beat 1/2 minute on low; scrape bowl often.

6Beat 3 minutes on high.

7Then with spoon, stir in enough more flour to make soft dough.

8Turn out on floured surface; knead until smooth and elastic, about 6 minutes.

9Shape ball; return to greased bowl.

10Cover; let rise an hour.

11Punch down; place on board.

12Cover; let rest 10 minutes.

13Make into rolls; place in greased pans.

14Let rise until double.

15Bake in 400° oven for 10 to 12 minutes.

16Makes 2 dozen.
