Potato Rolls

- 1 c. mashed potatoes
- 2/3 c. shortening
- 1/2 c. sugar
- 1 tsp. salt
- 2 eggs
- 1 c. milk
- 2 cakes yeast
- 1 1/2 c. lukewarm water
- 6 to 8 c. all-purpose flour
Directions

1Mash potatoes.

2Add shortening, sugar, salt and beaten eggs. Blend together.

3Scald milk and let cool.

4Dissolve yeast in water and add to milk.

5Add flour to this to form dough. Let set until double.

6Punch down and make into rolls.

7Let set again to double in size. (Place them in a greased pan as they are made.)

8Bake at 350° for about 20 minutes.
