Potato Rolls

Ingredients

  • 1 c. mashed potatoes
  • 2/3 c. shortening
  • 1/2 c. sugar
  • 1 tsp. salt
  • 2 eggs
  • 1 c. milk
  • 2 cakes yeast
  • 1 1/2 c. lukewarm water
  • 6 to 8 c. all-purpose flour

Directions

    Mash potatoes.

    Add shortening, sugar, salt and beaten eggs. Blend together.

    Scald milk and let cool.
  4. 4
    Dissolve yeast in water and add to milk.

    Add flour to this to form dough. Let set until double.

    Punch down and make into rolls.

    Let set again to double in size. (Place them in a greased pan as they are made.)

    Bake at 350° for about 20 minutes.
