- 5 lb. red skin potatoes
- 2 bunches green onion, chopped
- 3 to 4 celery stalks, chopped
- 1 large green pepper, chopped
- 1 large red pepper, chopped
- 12 oz. light Italian dressing
- Mrs. Dash (for flavoring)
Directions

1Boil potatoes and cool slightly. Slice while warm. Layer potatoes and chopped vegetables (at least 2 layers) in an 11 x 14 dish. Sprinkle Mrs. Dash on top. Drizzle dressing over all. Cover and let set overnight.
