  • 6 or 8 medium potatoes
  • 4 eggs (hard boiled peeled and diced)
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/2 c. mayonnaise
  • 3/4 c. salad cube pickles
  • 1 tsp. mustard
  • 1 medium onion (optional)

Directions

    Peel, dice and cook potatoes until tender.

    Drain off excess water.

    Add diced eggs, salt, pepper, mayonnaise, mustard, and onions if desired.

    Mix well.

    Potato salad can be served hot, but is just as good served cold.
