Potato Salad

Ingredients

  • 4 medium sized potatoes, peeled and cut in cubes
  • 2 large hard boiled eggs diced
  • 2 stalks celery diced
  • 1 large pickle diced or 1 tablespoon relish
  • 8 pitted green olives cut in small pieces
  • 1 medium sized green bell pepper diced
  • 2 tablespoons mayo
  • 1 teaspoon regular mustard or dijon mustard
  • Salt
  • Black and white pepper

Directions

    Cook the potato in salted water, don't overcook, drain, set aside to cool.

    In a large bowl mix the mayo with the mustard, salt and pepper to taste.

    Add to the mixture the bell peppers, the celery, the pickels, the olives, the potatoes and the hard boiled eggs at the very end, mix well and chill for 2 hours before serving or chill it overnight.Ouila!
