Potato Salad

Ingredients

  • 1 (5 lb.) bag potatoes
  • 4 eggs
  • 2 tsp. salt
  • 1 medium onion, chopped
  • 1 small bell pepper, chopped
  • 2 stalks celery, chopped
  • 2 Tbsp. sweet pickle relish
  • 1 1/2 c. mayonnaise
  • 3 Tbsp. mustard
  • 1/2 tsp. pepper

Directions

    Peel and quarter the potatoes.

    Cover with water and add 1 teaspoon of salt.

    Cook until tender.

    Boil eggs.

    Let cool, then mash eggs.

    When potatoes are done, drain water.

    Add mashed eggs, onion, bell pepper, celery, sweet pickle relish, 1 cup of mayonnaise, 3 tablespoons of mustard, 1 teaspoon of salt and 1/2 teaspoon of pepper.

    Mix well and chill.
