  • 1 envelope (from a 6 oz. pkg.) potato pancake mix
  • 3/4 c. cold water
  • 1 large egg
  • 1 (6 1/2 oz.) can pink salmon, drained and flaked with a fork
  • 2 tsp. instant minced onion
  • 1 tsp. dried dill weed
  • 1/4 tsp. pepper
  • 1 Tbsp. vegetable oil

    Heat oil in a 10-inch skillet over medium heat.

    Add potato mixture, spreading with a spatula to cover bottom of pan.

    Cook 5 to 6 minutes, pressing down occasionally until bottom is browned and crisp.

    Turn hash in clumps and press back into a round.
