- 1 onion, chopped
- 1/2 fennel bulb, chopped
- 3 celery ribs, chopped
- 4 carrots, peeled and chopped
- 2 cups sauerkraut, very WELL-DRAINED
- fresh cracked pepper
- sea salt, to taste
