- 6 large baking potatoes
- 8 strips crisp bacon
- 1/2 c. melted butter
- 1 c. chopped mushrooms (if desired)
- salt and pepper
- paprika
- parsley (for looks)
- cheese (Cheddar works best)
Directions

1Bake potatoes, cut in halves.

2Cook bacon and melt butter while preparing potatoes.

3Keep oven on.

4Spoon out potatoes from shells, leaving only enough to keep skin firm.

5Spoon in 1/2 teaspoon butter, bacon and mushrooms; then top with Cheddar or your choice of cheese.

6Serve with sour cream, ketchup, mustard or horseradish sauce.
