Potato Skins

  • 8 medium potatoes
  • 2 Tbsp. margarine
  • salt
  • pepper
  • garlic salt or onion salt
  • 6 slices bacon, cooked and crumbled (optional)
  • 4 chicken breasts, cooked and cubed
  • 1 c. Mozzarella cheese, grated
  • 1 c. Cheddar cheese, grated

Directions

    Scrub and bake the potatoes. Scoop out inside of potatoes and set aside for other use (mashed potatoes, potato salad, etc.). Rub inside of skins with margarine.

    Sprinkle with salt, pepper and onion salt or garlic salt.

    Place potato skins under broiler until skins are crisp.

    Mix cubed chicken and cheeses together.
  5. 5
    Fill potato skins and return to broiler until cheese is melted.

    Top with crumbled bacon.
