- 6 potatoes, cubed
- 2 carrots, sliced
- 2 celery stems, sliced
- 2 onions, diced
- 1 Tbsp. parsley, chopped
- 5 c. water
- 4 chicken bouillon cubes
- 13 oz. evaporated milk
- 1/2 c. margarine
Directions

1Combine all ingredients, except milk and margarine.

2Cook over medium heat for 40 minutes, covered.

3Add milk and margarine; simmer for 30 minutes.

4For cream of potato soup, mash 1/2 of cooked potatoes and add finely shredded Cheddar cheese.

5May reduce water and use milk instead of evaporated milk.
