Potato Soup

Ingredients

  • 2 c. peeled potatoes, cut into 1/4-inch cubes
  • 2 medium onions, thinly sliced
  • 2 Tbsp. butter
  • 6 c. hot water or chicken or beef consomme
  • salt
  • freshly ground pepper
  • 2 to 3 slices fried crisp bacon, crumbled
  • 2 Tbsp. minced parsley, chives or dill weed

Directions

    Combine potatoes, onions and butter in casserole.

    Cook, covered, over lowest possible heat for about 4 minutes or until potatoes are almost cooked.

    Stir frequently.

    If necessary, add 1 to 2 tablespoons hot water or consomme to prevent scorching.

    Add rest of the hot water or bouillon.

    Season with salt and pepper. Simmer, covered, for 5 to 10 minutes or until potatoes are cooked. Sprinkle with bacon and parsley.
