Ingredients
- 2 c. peeled potatoes, cut into 1/4-inch cubes
- 2 medium onions, thinly sliced
- 2 Tbsp. butter
- 6 c. hot water or chicken or beef consomme
- salt
- freshly ground pepper
- 2 to 3 slices fried crisp bacon, crumbled
- 2 Tbsp. minced parsley, chives or dill weed
Directions

1Combine potatoes, onions and butter in casserole.

2Cook, covered, over lowest possible heat for about 4 minutes or until potatoes are almost cooked.

3Stir frequently.

4If necessary, add 1 to 2 tablespoons hot water or consomme to prevent scorching.

5Add rest of the hot water or bouillon.

6Season with salt and pepper. Simmer, covered, for 5 to 10 minutes or until potatoes are cooked. Sprinkle with bacon and parsley.
