Potato Soup

  • 3 Tbsp. butter or oleo
  • 1 large onion
  • 6 large potatoes
  • 1 c. celery, chopped
  • 3 Tbsp. parsley, chopped
  • 2 tsp. salt or to taste
  • 1 tsp. pepper or to taste
  • 1 to 1 1/2 c. water
  • 1 qt. milk

Directions

    Saute chopped onion in butter or oleo until tender.

    Do not brown.

    Add pared and cubed potatoes, celery, parsley, salt, pepper and water to cover vegetables by about 1 inch.

    Cook until tender. Mash about half of potato mix, then add the milk and reheat thoroughly.

    Do not boil.

    Great served with buttered toast.
