- 3 Tbsp. butter or oleo
- 1 large onion
- 6 large potatoes
- 1 c. celery, chopped
- 3 Tbsp. parsley, chopped
- 2 tsp. salt or to taste
- 1 tsp. pepper or to taste
- 1 to 1 1/2 c. water
- 1 qt. milk
Directions

1Saute chopped onion in butter or oleo until tender.

2Do not brown.

3Add pared and cubed potatoes, celery, parsley, salt, pepper and water to cover vegetables by about 1 inch.

4Cook until tender. Mash about half of potato mix, then add the milk and reheat thoroughly.

5Do not boil.

6Great served with buttered toast.
