Potato Soup

Ingredients
- 4 medium potatoes, peeled and diced
- 1/2 c. chopped onion
- 1 1/2 c. chopped celery
- 1 c. diced carrots
- 1 c. ground or minced smoky ham
- 4 chicken bouillon cubes or 1 c. chicken stock
- 2 qt. water
- 1 c. cream or condensed milk
- chopped parsley and chives (about 1 1/2 tsp. each)
Directions

1Pour water, chicken stock or bouillon in a large heavy pot. Add potatoes, onion, celery, carrots and ham.

2Cook until it comes to a boil, stirring constantly.

3Turn down heat so the soup simmers for 45 minutes.

4If too thin, add a tablespoon of flour to the condensed milk before you stir it in.

5Add the milk, parsley and chives.

6Stir until hot and potatoes and carrots are tender. Serve.
