Potato Soup

Ingredients

  • 4 medium potatoes, peeled and diced
  • 1/2 c. chopped onion
  • 1 1/2 c. chopped celery
  • 1 c. diced carrots
  • 1 c. ground or minced smoky ham
  • 4 chicken bouillon cubes or 1 c. chicken stock
  • 2 qt. water
  • 1 c. cream or condensed milk
  • chopped parsley and chives (about 1 1/2 tsp. each)

Directions

    Pour water, chicken stock or bouillon in a large heavy pot. Add potatoes, onion, celery, carrots and ham.

    Cook until it comes to a boil, stirring constantly.

    Turn down heat so the soup simmers for 45 minutes.

    If too thin, add a tablespoon of flour to the condensed milk before you stir it in.

    Add the milk, parsley and chives.

    Stir until hot and potatoes and carrots are tender. Serve.
