Potato Soup

Ingredients

  • 1 (12 oz.) pkg. bacon, diced, fried and drained
  • 7 medium potatoes, diced
  • 1 c. diced celery
  • 1 large onion, diced
  • 1 carrot, shredded
  • 1 to 1 1/2 c. potato flakes
  • water
  • 2 cans evaporated milk
  • salt to taste
  • pepper to taste

Directions

    In a Dutch oven, place celery, onion and carrot.

    Add 4 cups water and salt and pepper.

    Cook until partially done.

    Add diced potatoes (more water if needed) and bacon.

    Cover and cook until potatoes are done.

    Add 2 cans evaporated milk.

    Add potato flakes. Stir and simmer.

    Freezes real well.
