- 1 (12 oz.) pkg. bacon, diced, fried and drained
- 7 medium potatoes, diced
- 1 c. diced celery
- 1 large onion, diced
- 1 carrot, shredded
- 1 to 1 1/2 c. potato flakes
- water
- 2 cans evaporated milk
- salt to taste
- pepper to taste
Directions

1In a Dutch oven, place celery, onion and carrot.

2Add 4 cups water and salt and pepper.

3Cook until partially done.

4Add diced potatoes (more water if needed) and bacon.

5Cover and cook until potatoes are done.

6Add 2 cans evaporated milk.

7Add potato flakes. Stir and simmer.

8Freezes real well.
