Potato Soup

  • 4 c. diced potatoes
  • 1 medium or small onion, diced
  • 3 Tbsp. butter or margarine
  • 1 1/2 c. potato water
  • 1 tall can (1 1/2 c.) evaporated milk (I use sweet milk)
  • 1 tsp. salt
  • 1/4 tsp. pepper

Directions

    Wash, peel and dice potatoes; dice onion.

    Cover potatoes and onions with water in covered saucepan.
  3. 3
    Cook for 15 minutes. Drain, keeping 1 1/2 cups of the cooking water.

    Mash the vegetables with a potato masher.
  5. 5
    Add butter, cooking water, milk, salt and pepper.
  6. 6
    Heat; add more water if a thinner soup is desired.
