- 4 c. diced potatoes
- 1 medium or small onion, diced
- 3 Tbsp. butter or margarine
- 1 1/2 c. potato water
- 1 tall can (1 1/2 c.) evaporated milk (I use sweet milk)
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1Wash, peel and dice potatoes; dice onion.

2Cover potatoes and onions with water in covered saucepan.

3Cook for 15 minutes. Drain, keeping 1 1/2 cups of the cooking water.

4Mash the vegetables with a potato masher.

5Add butter, cooking water, milk, salt and pepper.

6Heat; add more water if a thinner soup is desired.
