- 1 large onion
- 1 c. thinly sliced celery
- butter
- 4 Tbsp. flour
- 1 qt. water
- 1 qt. rich chicken broth
- salt
- 1 c. grated carrots
- 6 medium potatoes
- 1 qt. whole milk
- dash of curry powder
- dash of white pepper
Directions

1Dice the onion.

2Saute onion and celery in butter in 1-gallon soup kettle.

3When tender, add the flour and mix to make smooth paste.

4Add the chicken stock, water, carrots and potatoes, diced very fine.

5Simmer for 1 hour or until vegetables are tender.

6Add the milk, curry powder, white pepper and salt to taste.

7Bring to simmer again for a few minutes.

8Serve hot with crisp crackers.
