Potato Soup

Ingredients

  • 1 large onion
  • 1 c. thinly sliced celery
  • butter
  • 4 Tbsp. flour
  • 1 qt. water
  • 1 qt. rich chicken broth
  • salt
  • 1 c. grated carrots
  • 6 medium potatoes
  • 1 qt. whole milk
  • dash of curry powder
  • dash of white pepper

Directions

    Dice the onion.

    Saute onion and celery in butter in 1-gallon soup kettle.

    When tender, add the flour and mix to make smooth paste.

    Add the chicken stock, water, carrots and potatoes, diced very fine.

    Simmer for 1 hour or until vegetables are tender.

    Add the milk, curry powder, white pepper and salt to taste.

    Bring to simmer again for a few minutes.

    Serve hot with crisp crackers.
