Potato Soup

  • 8 to 9 large potatoes, peeled and diced
  • 4 stalks celery, thinly sliced
  • 2 large onions, minced fine
  • 2 c. half and half
  • 3 cans chicken broth
  • 1 tsp. parsley flakes
  • 1 tsp. basil
  • 3/4 stick margarine
  • 5 heaping tsp. flour
  • salt and pepper to taste

Directions

    Cook in water, potatoes, celery and onions, until tender. Drain 1/2 of water.

    Cool.

    Add half and half, chicken broth, parsley flakes and basil.

    Melt margarine and stir in flour to make a smooth paste.

    Add to soup and stir to thicken.

    Salt and pepper to taste.
