- 8 to 9 large potatoes, peeled and diced
- 4 stalks celery, thinly sliced
- 2 large onions, minced fine
- 2 c. half and half
- 3 cans chicken broth
- 1 tsp. parsley flakes
- 1 tsp. basil
- 3/4 stick margarine
- 5 heaping tsp. flour
- salt and pepper to taste
Directions

1Cook in water, potatoes, celery and onions, until tender. Drain 1/2 of water.

2Cool.

3Add half and half, chicken broth, parsley flakes and basil.

4Melt margarine and stir in flour to make a smooth paste.

5Add to soup and stir to thicken.

6Salt and pepper to taste.
