Potato Soup

Ingredients

  • 1 chopped onion
  • 6 sliced carrots
  • 2 diced cloves garlic
  • 1 stick butter
  • 1 tsp. Tabasco
  • 1 tsp. Worcestershire sauce
  • 2 qt. half and half
  • 7 lb. potatoes
  • 1 c. grated cheese

Directions

    Cut up and boil potatoes; put aside and save.

    Cook and crumble bacon and save.

    Saute in butter, Tabasco and Worcestershire the onion, carrots and garlic until tender.

    Drain potatoes, saving 1 cup water.

    Slightly mash; add half and half, water and vegetables.

    Let simmer for 30 minutes.

    Top with bacon and cheese when ready to serve.
