Potato Soup

Ingredients

  • 6 large white potatoes, cut in small chunks
  • 8 c. water
  • 3 Tbsp. margarine
  • 2 Tbsp. onion, chopped fine
  • 1 Tbsp. celery flakes (for color)
  • 2 Tbsp. cornstarch
  • 1 c. milk
  • salt and pepper to taste
  • 2 Tbsp. carrots, chopped fine
  • 2 Tbsp. celery, chopped fine

Directions

    Cook potatoes on medium until tender with margarine, onion, celery, carrots, celery flakes, salt and pepper.

    Add milk and simmer.

    To thicken, mix cornstarch in small amount of water until blended, then add to soup (flour can be used, if preferred).
