Potato Soup

- 6 large white potatoes, cut in small chunks
- 8 c. water
- 3 Tbsp. margarine
- 2 Tbsp. onion, chopped fine
- 1 Tbsp. celery flakes (for color)
- 2 Tbsp. cornstarch
- 1 c. milk
- salt and pepper to taste
- 2 Tbsp. carrots, chopped fine
- 2 Tbsp. celery, chopped fine
Directions

1Cook potatoes on medium until tender with margarine, onion, celery, carrots, celery flakes, salt and pepper.

2Add milk and simmer.

3To thicken, mix cornstarch in small amount of water until blended, then add to soup (flour can be used, if preferred).
