Ingredients

  • 3 to 4 lb. potatoes, peeled and sliced
  • 3 or 4 carrots, peeled and sliced
  • 2 medium onions, sliced
  • 1/2 lb. bulk sausage, browned and drained
  • 2 Tbsp. butter
  • 4 oz. Velveeta or Cheddar, in chunks
  • water as needed to cover vegetables
  • 1 Tbsp. salt
  • 1 tsp. pepper to taste
  • 1 tsp. dill

Directions

    Put potatoes, carrots and onions in a big pot with just enough water to cover.

    Boil until tender.

    Do not drain! Mash.

    Stir in browned sausage, butter, cheese and spices.

    Simmer a few minutes, until cheese melts and flavors blend.
