Potato Strudel

Ingredients

• 1 lb yukon gold potato, peeled and cut into 3/4-inch dice
• 1/4 cup clarified butter
• 1 cup diced sweet potato, 3/4-inch dice
• 1 cup diced carrot, 3/4-inch dice
• 1/2 cup diced yellow onion
• 1 cup baby golden beets, peeled (don't use red beets, they'll stain the whole dish red)
• 1 teaspoon dried thyme
• 1 tablespoon flour
• 1 cup white wine
• 1 egg
• 1/2 cup heavy cream
• 1 cup sliced shiitake mushroom
• 1/4 cup chopped parsley
• 16 sheets phyllo dough
• 4 tablespoons melted butter
