Potato Taquitos

Ingredients
- 2 potatoes
- 1 egg
- 1 tsp salt
- 25 corn or flour tortillas
- 1/2 head lettuce, shredded
- 2 Roma tomatoes, sliced
- 1/2 onion, chopped
- 1 sour cream
- 1 crumbled feta cheese
- 1 homemade salsa (see other recipe)
Directions

1Peal, chop and boil potatoes

2Mash potatoes with egg and salt

3Heat tortillas in microwave 1-2 min.

4Roll potato mixture in tortillas

5Heat oil in fry pan
-
6Add taquitos to pan, fold side down.

7Turn taquitos when golden on one side.

8Cook the other side
-
9Move cooked taquitos to paper toweled container, vertically to allow oil to drain.

10Cover with paper towel to keep warm.

11Add toppings and enjoy
