- 7/8 pound potatoes
- 7 2/3 tablespoons flour
- 2 eggs
- 1 shallots diced
- parsley diced, to taste
- salt to taste
- ground black pepper to taste
- gruyere cheese grated, to taste
- dried tomatoes to taste
Directions

1Cook the unpeeled potatoes in boiling water or steam them.

2Drain and peel the potatoes.

3In a bowl, mash the potatoes with a fork.

4Add the flour, eggs, shallot, parsley, salt, pepper, and cheese.

5Mix it all well until a sticky batter forms.

6Pour the batter into a greased waffle maker, sprinkle with dried tomatoes, and cook.
