Potato With Kale

- 1 lb. small new potatoes
- 2 Tbsp. canola oil
- salt to taste
- 1 medium onion, chopped
- fresh garden kale
Directions

1Scrub and steam until tender the potatoes.

2In a large bowl, mash potatoes with oil and salt.

3Steam onion just until soft. Wash kale, allowing water to cling to leaves.

4Place kale in pan with onion and continue steaming, covered, until the kale is wilted.

5Chop fine and mix with potatoes.

6Place the mixture in an oven dish and bake at 350° to warm through and blend flavors.
