  • 6 medium potatoes
  • 1/4 c. butter
  • 1 tsp. onion salt
  • 1/2 pint sour cream
  • 1 can cream of mushroom soup
  • 1 1/2 c. Cheddar cheese, grated
  • 2 Tbsp. chives, chopped
  • 1 c. crushed corn flakes
  • 2 Tbsp. butter

Directions

    Preheat oven to 350°. Scrub potatoes cooked with skin on. Cool and peel potatoes. Grate and shred potatoes.

    Set aside. Heat 1/4 cup butter with soup. Add chives, onion salt, sour cream and cheese. Mix well. Season to taste. Add potatoes. Spray casserole dish in oil. Add mixture. Melt 2 tablespoons of butter and mix with crushed cornflakes. Sprinkle on top of potatoes. Bake 45 minutes.
