- 6 large potatoes
- 1 onion, finely chopped
- 1 cup mushroom, finely chopped
- 2 tablespoons butter
- 1 tablespoon all-purpose flour
- 12 cup mayonnaise
- 12 teaspoon salt
- 14 teaspoon pepper
- 14 teaspoon paprika
- 3 tablespoons milk
Directions

1Wash potatoes thoroughly.

2Cut a thin slice from top of each potato.

3Carefully scoop out potato without harming skin, leaving a 1/2-inch shell.

4Place shells in a large bowl.

5Cover with water until needed.

6Finely chop scooped-out potato.

7In a large skillet, cook chopped potato until slightly tender.

8Add onion and mushrooms and saute in hot butter until onion is tender.

9Stir in flour, parsley, salt, pepper, and paprika.

10Cook until golden.

11Add milk; cook until slightly thickened.

12Stir in mayonnaise.

13Drain potato shells and fill with cooked potato mixture.

14Place in shallow baking pan.

15Bake potatoes, uncovered, at 450F oven for 35 minutes or until potato shells are tender.
