- 6 medium potatoes
- 1/4 c. butter or lard
- 2 Tbsp. cooking oil
- 3 medium onions, thinly sliced
- salt and pepper
- 1/4 c. minced parsley
Directions

1Make a batch of creamy mashed potatoes; season them well with salt, pepper and butter.

2Pile them in a great fluffy heap on a round platter.

3Around the outer edge, make a wreath of crispy fried Danish bacon and fill the center with Frisih Stegt Log (recipe follows).

4Have this very hot (you can slip it into the oven for a few minutes after it's arranged.)

5Garnish platter with slices of cold pickled beets before serving.
