- 4 lb. small red potatoes
- 1 lb. grated Velveeta cheese
- 1 cube margarine
- 1 c. chopped green onions
- salt and pepper to taste
Directions

1Boil or steam potatoes.

2Cook until tender.

3Let cool. Leaving skins on, cut potatoes in quarters or small size pieces. Using a 3-quart casserole dish, put a layer of potatoes in bottom of dish.

4Dot with slices of margarine.

5Sprinkle on part of cheese, onion, salt and pepper.

6Repeat process.

7Bake in covered dish for 30 minutes at 350°.
