- 2 double skinless, boneless chicken breasts, minced
- 1 small onion, chopped
- 1 large green pepper, julienned
- 1 (No. 303) can whole tomatoes, chopped, drained (keep juice)
- 3 garlic cloves, chopped
- 6 large mushrooms, sliced
- olive oil
- salt and pepper
- Tabasco
- thyme
- bay leaf
Directions

1Saute chicken in olive oil, put in different pot.

2Saute green pepper, onion and mushrooms.

3Add tomatoes, garlic and seasonings. Add to chicken.

4Put in thyme, bay leaf and tomato juice.

5Bring to boil 10 minutes.

6Season to taste with Tabasco.
