- 2 c. or 4 sticks butter, softened
- 3 c. cake flour
- 2 1/2 c. sugar
- 8 large eggs
- 1 c. evaporated milk
- 2 tsp. vanilla extract
- 2 tsp. lemon extract
Directions

1Preheat oven to 350°.

2Butter and flour a 9 x 4 1/2-inch loaf pan.

3Beat the butter in bowl with an electric mixer until soft. Gradually add sugar; continue beating at high speed until very light and fluffy.

4Add eggs, one at a time; beat well after each. When thoroughly blended, add flour, 1 cup at a time; beat at low speed until blended.

5Stir in milk, vanilla extract and lemon extract.

6Transfer batter to loaf pan; bake until golden brown, about 1 1/2 hours.

7Cool; remove from pan.
