  • 2 c. or 4 sticks butter, softened
  • 3 c. cake flour
  • 2 1/2 c. sugar
  • 8 large eggs
  • 1 c. evaporated milk
  • 2 tsp. vanilla extract
  • 2 tsp. lemon extract

Directions

    Preheat oven to 350°.

    Butter and flour a 9 x 4 1/2-inch loaf pan.

    Beat the butter in bowl with an electric mixer until soft. Gradually add sugar; continue beating at high speed until very light and fluffy.

    Add eggs, one at a time; beat well after each. When thoroughly blended, add flour, 1 cup at a time; beat at low speed until blended.

    Stir in milk, vanilla extract and lemon extract.

    Transfer batter to loaf pan; bake until golden brown, about 1 1/2 hours.

    Cool; remove from pan.
