  • 1 1/2 c. sugar
  • 1 c. shortening
  • 2 c. all-purpose flour
  • 1 tsp. lemon flavoring or 1 tsp. grated lemon peel
  • 2 tsp. vanilla
  • 6 large eggs

    Cream sugar, vanilla and shortening until fluffy.

    Add eggs alternately with flour.

    Beat until well blended.

    Add lemon flavoring.

    Pour into well greased and floured 9 x 5 x 3 1/2-inch loaf pan.

    Bake at 325° for 1 1/2 hours or until center is done. Cool about 10 minutes on wire rack; remove from pan and cool completely.
