  • 1 lb. sugar (2 c.)
  • 1 lb. butter
  • 1 lb. cake flour (2 c.)
  • 1 lb. eggs, separated (10 large)
  • 1/2 tsp. salt
  • juice from 1/2 lemon and zest from whole lemon (grate rind)
  • 1/4 tsp. soda dissolved in 1 Tbsp. cold water

Directions

    Beat egg whites to soft peaks. Beat egg yolks. Add all ingredients except egg whites.

    Blend and stir. Fold beaten egg whites into cake batter.

    Pour batter into greased and floured loaf pan. Bake at 325° for 1 hour or until toothpick comes out clean.
