  • 1 c. shortening
  • 1 2/3 c. sugar
  • 5 eggs
  • 1 1/2 Tbsp. lemon juice
  • 1/2 tsp. almond extract
  • 2 c. cake flour
  • 1/4 tsp. salt

    Cream shortening and sugar well.

    Add eggs, one at a time. Beat well after each addition.

    Add lemon juice and almond extract; beat well.

    Add sifted dry ingredients.

    Bake in waxed paper lined 5 x 10-inch loaf pan at 325° for 70 minutes.
