Prairie Eggnog Pie

Ingredients

  • 1 1/2 c. milk
  • 1/2 c. sugar
  • 2 tsp. cornstarch
  • 1 Tbsp. butter
  • 1/8 tsp. salt
  • 2 tsp. gelatin
  • 2 Tbsp. cold water
  • 3 eggs, separated
  • 3/4 tsp. vanilla
  • 2 c. whipped cream
  • 1 (8-inch) baked pie shell

Directions

    Scald milk in double boiler.

    Soak gelatin in cold water.

    Mix together sugar, cornstarch, salt and egg yolks.

    Gradually pour milk into this mixture and return to double boiler.

    Cook until thickened.

    Remove from heat.

    Add gelatin, butter and vanilla. Chill.

    When mixture is cool, add beaten egg whites and pour into baked pie shell.

    Sprinkle with nutmeg and chill for several hours. Spread with whipped cream and chocolate curls.
