Ingredients

  • 4 (16 oz.) cans red kidney beans
  • 1/2 c. butter or margarine
  • 8 oz. shredded Provolone cheese (about 2 c.)
  • 1/4 to 1/3 c. chopped hot pepper (jalapenos or Serranos)
  • 2 Tbsp. minced onion
  • 2 cloves garlic, minced
  • 1/2 tsp. salt
  • corn or tortilla chips for dipping

    Drain beans, reserving 2/3 cup of the liquid.

    Mash beans.

    In a large skillet, combine beans, liquid, butter, cheese, peppers, onion, garlic and salt.

    Heat and stir until mixture is hot and cheese melts.

    Transfer to chafing dish or crock-pot.

    Serve with chips.
