Ingredients
- 2 lbs leeks, outer leaves and root ends removed
- 3 tablespoons olive oil
- 3 medium onions, sliced thin
- 3 tomatoes, peeled & chopped
- 1/2 teaspoon salt
- fresh ground pepper
- 1 cup chicken broth or 1 cup chicken bouillon
- 2 tablespoons chopped fresh dill or 1 tablespoon dried dill
Directions

1Wash leeks and halve them crosswise.

2In a large saucepan, slowly saute the onions in hot oil until lightly browned.

3Add leeks and saute a few more minutes, turning carefully to prevent them from coming apart.

4Add tomatoes through broth; bring to a boil, reduce heat and simmer 30 minutes.

5Remove from the heat and let cool.

6Sprinkle with dill before serving.
