Prawn Curry

Ingredients

  • 6 1/2 tablespoons butter
  • 1 onion finely chopped
  • 1 clove garlic minced
  • 1 tablespoon curry powder or paste
  • 1/3 cup all purpose flour
  • 3 cups milk
  • 1 1/2 pounds prawns cooked, peeled and deveined
  • 1 tomato chopped
  • 1 lemon juiced
  • 2 teaspoons chili sauce
  • 2 teaspoons brown sugar
  • steamed rice to serve
  • cilantro sprigs fresh, to serve
  • papadums to serve

Directions

    Melt butter over medium heat. Add onion, garlic and curry powder. Cook for 2-3 mins, until tender. Add flour. Cook, stirring, for 1 min. Gradually whisk in milk, until smooth. Cook, stirring, until sauce boils and thickens. Reduce heat and simmer for 3 mins. Add prawns, chopped tomato, lemon juice, chili sauce and brown sugar. Gently heat for 2-3 mins.

    Serve with steamed rice, cilantro and papadums.
